Freshly collected wild vegetables and especially herbs, which Greece cuisine champions, are daily staple food on Ikaria island, expert collection being passed on to the next generation like cooking with it. Jamie follows suit in a fish recipe and to spike drinks designed to maximize water intake and avoid caloric-overdose soft-drinks. He returns to the Japanese longevity-champion island Okinawa, where he tastes freshly made tofu, which the natives consume most in the world, and eagerly works it into his own recipe for lean burgers.
